Çibörek is famous food for the Crimean Tatars who migrated to Eskişehir years ago. That’s why it also called Tatar böreği. Its original name is “şibörek”.
In time, its name changed in Turkey as çibörek or çiğ börek. It is one of the famous dishes in Eskişehir province. If it is made well, because of its properties it doesn’t absorb too much oil. Çiğbörek dough should be blistered and soft.
The pre-prepared raw mix, wrapped with flat bread and thrown into the hot oil and cooked in it. Çibörek which is made out of thin dough and minced meat seasoned with spices gives a wonderful taste.
